เนื้อสัตว์เป็นแหล่งโปรตีนที่สำคัญต่อมนุษย์ก็จริง แต่ความโหดร้ายคือยิ่งคนกินเนื้อมาก ยิ่งมีสัตว์ต้องถูกฆ่ามากขึ้น และการผลิตเนื้อแต่ละครั้งต้องใช้น้ำไม่รู้กี่ลิตรต่อกี่ลิตร กระทบไปถึงสิ่งแวดล้อมด้วยเช่นกัน ด้วยเหตุนี้เองมนุษย์จึงคิดอยากแก้ปัญหาด้วยการผลิตเนื้อที่ไม่ต้องฆ่าสัตว์ แต่เปลี่ยนมาผลิตจากเซลล์ของสัตว์แทน เรียกกันว่า Cultured Meat
กว่าจะเป็น Cultured Meat
Cultured Meat หรือบางคนอาจรู้จักในชื่อ Cultivated Meat หรือ Lab-Grown Meat เห็นหลายชื่อแต่มีความหมายเดียวกันคือเป็นเนื้อที่นักวิทยาศาสตร์ทำขึ้นมาจากการนำเซลล์จากชิ้นเนื้อเล็กๆ ของสัตว์ซึ่งถูกตัดมาเก็บไว้ในถังทดลอง ก่อนจะเติมสารอาหารลงไปเพื่อให้เซลล์ดังกล่าวพัฒนาและแยกตัวออกมาเรื่อยๆ และค่อยๆ มีขนาดใหญ่ขึ้นจนสามารถนำไปประกอบเป็นชิ้นเนื้อได้
ตั้งแต่เมื่อปี ค.ศ. 2001 Benjamin นักวิทยาศาสตร์ชาวเยอรมันและทีมพยายามสร้าง Cultured Meat เพื่อให้นักบินอวกาศนำไปใช้เป็นอาหารบนยานอวกาศ พวกเขาทดลองกับเซลล์ของปลาทองจนชิ้นเนื้อปลานั้นเจริญเติบโตเป็นเนื้อชิ้นใหญ่ขึ้น แต่ในตอนนั้นไม่มีใครกล้ากินและยังไม่ผ่านการรับรองจากคณะกรรมการอาหารและยาของสหรัฐอเมริกา จึงไม่ได้ผลิตออกมาอย่างเป็นทางการ (ไม่อย่างนั้นนักบินอาจจะได้กินสเต๊กปลาทองไปแล้ว)
ถึงจะไม่ผ่านการรับรอง แต่การวิจัยยังคงดำเนินต่อไปจนกระทั่งปี ค.ศ. 2013 นักวิทยาศาสตร์ในเนเธอร์แลนด์ประสบความสำเร็จกับการผลิตเบอร์เกอร์เนื้อจากเซลล์ของวัวเป็นครั้งแรก (เป็นเบอร์เกอร์ที่ต้นทุนแพงมาก ประมาณ 12 ล้านบาทไทยเลยทีเดียว) ซึ่งตอนแรกเนื้อออกมาเป็นสีขาวไม่น่ากิน จึงต้องเติมไมโอโกลบินลงไปให้เนื้อกลายเป็นสีแดง บางคนที่ได้ชิมบอกว่ารสชาติอร่อยเหมือนเนื้อทั่วไป ขณะที่บางคนบอกว่าไม่นุ่ม บางคนก็เสียดายที่มีแต่ส่วนเนื้อล้วนไม่มีไขมัน (คนชอบกินเนื้อติดมันน่าจะไม่ปลื้ม)
กว่า 20 ปีที่ความตั้งใจในการผลิต Cultured Meat เกิดขึ้นในหลายประเทศ นักวิจัยพยายามอย่างหนักเพื่อให้ได้เนื้อเพาะเลี้ยงจากวัว หมู และไก่ที่สมบูรณ์แบบทั้งรสชาติ และช่วยรักษ์โลกได้ จนเมื่อปี ค.ศ. 2020 สิงคโปร์เป็นประเทศแรกของโลกที่อนุญาตให้มีการนำเข้าเนื้อไก่จากการทดลองของบริษัท Eat Just แต่ก็มีเพียงคนบางกลุ่มเท่านั้นที่ได้กินอาหารจากวัตถุดิบเหล่านั้น เพราะไม่ได้วางขายกันทั่วไป
ส่วนประเทศที่เชี่ยวชาญในวงการนี้คงต้องยกให้ประเทศอิสราเอล กับบริษัทขายเนื้อ Believer Meats พวกเขาก่อตั้งโปรเจ็กต์ Future Meat Technologies เพื่อการนี้ และจดสิทธิบัตรเทคโนโลยีการเพาะเลี้ยงเซลล์ในรูปแบบเฉพาะตัวตั้งแต่ปี ค.ศ. 2018 จนล่าสุดเมื่อต้นปี ค.ศ. 2024 ที่ผ่านมา อิสราเอลก็กลายเป็นอีกประเทศที่ออกใบอนุญาตผลิต Cultured Meat ได้อย่างถูกกฎหมาย
หรือ Cultured Meat จะมีประโยชน์มากกว่า?
เนื่องจากเนื้อสัตว์จากห้องทดลองเป็นเนื้อที่ได้จากเซลล์ของสัตว์จริงๆ จึงยังมีสารอาหารอยู่อย่างครบถ้วนเหมือนเนื้อสัตว์ที่ได้จากกรรมวิธีทั่วไป แต่สิ่งที่แตกต่างอย่างเห็นได้ชัดคือ การไม่ต้องฆ่าสัตว์ ไม่ต้องพรากสัตว์จากครอบครัว ลดปัญหาสิ่งแวดล้อม และที่สำคัญไม่แพ้กันคือเรื่องของความสะอาด เพราะนักวิทยาศาสตร์สามารถควบคุมได้ตั้งแต่ในห้องทดลอง ทำให้เนื้อเหล่านี้มีโอกาสปนเปื้อนแบคทีเรีย E. coli น้อยกว่าปกติ
ปัจจุบันเนื้อที่ได้จากการเพาะเลี้ยงเซลล์วางจำหน่ายอยู่แค่ในประเทศสหรัฐอเมริกา อิสราเอล และสิงคโปร์ ซึ่งอนาคตประเทศอื่นๆ อาจจะยอมรับการซื้อขายเนื้อเหล่านี้อย่างถูกกฎหมายมากขึ้น แต่ถึงจะหาซื้อได้ในบางประเทศ Cultured Meat ยังคงมีข้อจำกัดด้านต้นทุนอันสูงลิ่ว ทำให้ราคาแพงตามไปด้วย และบวกกับรสชาติที่หลายคนบอกว่าไม่ค่อยถูกปากเมื่อเทียบกับเนื้อปกติทำให้คนไม่อยากกินกัน ซึ่งนักวิทยาศาสตร์เล็งเห็นปัญหาตรงจุดนี้และกำลังเร่งพัฒนาเทคโนโลยีเพื่อลดต้นทุนการผลิตและปรับปรุงรสชาติจนกว่าจะถึงจุดที่เรียกว่าอร่อย
ในอีกไม่กี่ปีข้างหน้าเราอาจจะได้เห็น Cultured Meat วางขายทั่วไปตามท้องตลาดในราคาเข้าถึงง่าย ได้กินเบอร์เกอร์ สเต๊ก ไส้กรอก ฯลฯ จากเนื้อในห้องทดลองที่รสชาติอร่อยจนไม่อยากกลับไปกินเนื้อธรรมดาทั่วไปเลยก็ได้
