ร้านอาหาร Viu (วูวร์) บนชั้น 12 ของโรงแรมระดับ 5 ดาว อย่างเดอะ เซนต์ รีจิส กรุงเทพฯ (The St. Regis Bangkok) จัดว่าขึ้นชื่อเรื่องอาหารเมดิเตอร์เรเนียนรสเลิศ ท่ามกลางวิวชวนผ่อนคลายของสนามกอล์ฟราชกรีฑาสโมสรที่ทำให้แขกไปใครมาก็ต้องหาโอกาสแวะขึ้นไป
เมนูอร่อยของที่นี่เป็นฝีมือของเชฟชาวอิตาเลียน “มาเตโอ ฟอนทานา” ผู้ทำตามความฝันในวัยเด็กอันได้แรงบันดาลใจมาจากคุณยาย ทำให้เขามุ่งหน้าออกเดินทางหาประสบการณ์ทำงานครัวในร้านอาหารรางวัลมิชลินและร้านชั้นนำมาแล้วหลายประเทศ เช่น ร้าน Duomo (มิชลิน 2 ดาว) และ ร้าน Il Luogo di Aimo e Nadia (มิชลิน 2 ดาว) ประเทศอิตาลี ร้านในเครือ Le Cirque ที่สหรัฐอาหรับเอมิเรตส์และอินเดีย ร้าน Da Vittorio (มิชลิน 3 ดาว) ประเทศโปรตุเกส ก่อนจะมารับหน้าที่หัวหน้าเชฟของร้านอาหารวูวร์แห่งนี้
เทคนิคการคิดสูตรอาหารแต่ละเมนูของเชฟมาเตโอคือการนำวัฒนธรรมอาหารของอิตาลีที่มีอยู่แต่เดิมมาพัฒนา ดัดแปลงด้วยความละเอียดอ่อนและตามสมัยนิยมมากขึ้น ทำให้รสชาติยังคงความเป็นต้นตำรับแต่รูปลักษณ์อาจจะดูแปลกใหม่มากขึ้น เมนูที่เชฟแนะนำล้วนแต่เป็นซิกเนเจอร์ของร้านทั้งสิ้น
Homemade Braised Duck Leg Ravioli ราวิโอลีคอมฟอร์ตฟู้ดที่คนอิตาเลียนหลายบ้านมักทำกินกัน เมนูนี้สอดไส้ขาเป็ดที่ตุ๋นจนนุ่ม ซึ่งเชฟคุ้นเคยจากการช่วยคุณยายทำมาตั้งแต่ 6 ขวบ แล้วจึงนำมาผสมผสานเทคนิคสมัยใหม่ ทำให้หน้าตาดูน่ากินขึ้นด้วยโฟมกระเทียมสีเขียว
Filetto di Manzo “alla Rossini” หรือสเต๊กเนื้อสันในสไตล์อิตาเลียน ไล่เรียงเป็นชั้น จากฐานคือขนมปัง ตรงกลางคือเนื้อพรีเมียมชิ้นหนา เนื้อนุ่ม ปิดท้ายด้วยฟัวกราส์ แล้วราดซอสเสต็กเนื้อทำเองกับเห็ดทรัฟเฟิลสไลด์บาง
Vitello Tonnato เมนูเด็ดจากแคว้นปีเยมอนเต (Piemonte) ในอิตาลี เสิร์ฟเนื้อลูกวัวราดซอสที่ทำมาจากปลาทูน่า ปลาแอนโชวี และเ คเปอร์ โดยเชฟใส่ความคิดสร้างสรรค์ลงไปในการเรียงเนื้อลูกวัวสไลด์จนเป็นรูปดอกไม้อย่างสวยงาม
