ช่วงเดือนกรกฎาคมที่ผ่านมามีอีเวนต์ที่สร้างสีสันและความคึกคักให้กับตลาดเครื่องดื่มอย่าง Sake Week Thailand ด้วยเป็นอีเวนต์แรกที่รวบรวมแบรนด์เหล้าสาเกจากประเทศญี่ปุ่นมาไว้มากที่สุด ซึ่งเกิดจากความร่วมมือของผู้นำเข้าในประเทศไทยหลายราย โดยผู้อยู่เบื้องหลังปรากฏการณ์ครั้งสำคัญนี้คือคุณกอล์ฟ-ธนพิสิฐ ดุรงค์จิรภัทร์ ผู้ก่อตั้ง The Sake Merchant และเป็นหนึ่งในประธานผู้ก่อตั้งกลุ่ม Sake Club Thailand มานานเกือบ 10 ปี
คุณกอล์ฟเล่าถึงแรงบันดาลใจในการนำเข้าสาเก และขับเคลื่อนสาเกให้เป็นที่รู้จักมากขึ้นในประเทศไทย จากไลฟ์สไตล์ที่ชื่นชอบการกินดื่มตั้งแต่สมัยยังเรียนต่างประเทศ และมีโอกาสเดินทางไปประเทศต่างๆ เพื่อแสวงหาที่กินเป็นภารกิจหลัก โดยที่ชื่นชอบมากเป็นพิเศษคือรายละเอียดอาหารและเครื่องดื่มของญี่ปุ่น โดยหลายปีที่ผ่านมาคุณกอล์ฟเป็นผู้ริเริ่มการจัด Sake Pairing ร่วมกับร้านอาหารต่างๆ บางครั้งก็มีการเชิญเชฟจากประเทศญี่ปุ่นระดับมิชลินมาร่วมด้วย จนถึงช่วงโควิด-19 ที่ไม่สามารถเดินทางไปต่างประเทศได้ คุณกอล์ฟโหยหาสาเกที่มีรสชาติดีเหมือนเปิดขวดในประเทศญี่ปุ่น จึงได้ติดต่อไปยังต้นทางและได้ทดลองส่งสาเกมาประเทศไทยกว่า 2 ปีครึ่งเพื่อหาวิธีควบคุมอุณหภูมิให้อยู่ในช่วง 0 ถึง -5 องศาเซลเซียสตลอดการขนส่ง รวมถึงเมื่อเปิดตรวจที่ด่านกรมศุลกากรก็ยังสามารถควบคุมอุณหภูมิไว้ได้
“เราได้ทดลองส่งสินค้าผ่านบริษัทขนส่งหลายเจ้า แม้กระทั่งฝากผู้นำเข้าบางรายนำเข้ามา แต่เนื่องจากการควบคุมอุณหภูมิไม่ดีพอ สาเกที่มีความอ่อนไหวต่ออุณหภูมิจึงเปลี่ยนไปเมื่อได้ลองชิม ผมจึงตัดสินใจลงทุนสร้างที่จัดเก็บสาเกที่ควบคุมอุณหภูมิ ไปจนถึงหาขนส่งที่สามารถจัดหาตู้ควบคุมอุณหภูมิต่ำเพื่อขนส่งสาเกโดยเฉพาะ สาเกของเราไม่ได้แช่รวมกับอาหารหรือแชร์ตู้กับใคร เนื่องจากผมไม่อยากให้มีกลิ่นอื่นๆ ติดมาด้วย” จึงกล่าวได้ว่าทาง The Sake Merchant มีการพัฒนาระบบขนส่งและตู้จัดเก็บที่ออกแบบมาเพื่อขนส่งสาเกที่ทันสมัยและไม่เหมือนใคร
คุณกอล์ฟมีใบรับรองผู้เชี่ยวชาญด้านสาเกจากหลายสถาบัน พ่วงด้วยประสบการณ์มายาวนาน จึงสามารถคัดสรรแบรนด์สาเกที่ดีที่สุด ซึ่งหลายรายยังไม่เคยส่งออกมาประเทศไทย หรือแม้แต่บางรายก็ยังหาได้ยากแม้กระทั่งในประเทศญี่ปุ่นเอง
“ผมพบว่าสาเกเป็นเครื่องดื่มที่มีเสน่ห์ ดื่มแล้วไม่ค่อยกลบหรือลดทอนรสชาติอาหาร ในทางกลับกันยังช่วยชูรสชาติอาหาร เพิ่มรสอูมามิซึ่งเป็นรสชาติที่ 5 ทำให้อยากกินอาหารมากขึ้น แพริ่งกับอาหารได้หลากหลาย ไม่ยึดติดว่าต้องกินกับอาหารญี่ปุ่นเท่านั้น ผมจึงมีความตั้งใจอยากนำเข้าสาเกคุณภาพดี มีตัวเลือกให้กับลูกค้ามาก ให้ลูกค้าได้รับประสบการณ์กินดื่มใหม่ๆ ที่ดีอย่างที่ผมเคยได้รับรู้มาก่อน แต่การนำเข้าสาเกไม่ใช่เรื่องง่าย เพราะต้องสร้างความเชื่อมั่นให้กับผู้ผลิตในท้องถิ่นที่มีความแข็งแกร่งมาก ในช่วงแรกที่นำเข้ามีประมาณ 6-7 แบรนด์ ปัจจุบันนี้มีมากกว่า 15 แบรนด์แล้ว” คุณกอล์ฟกล่าว
คุณกอล์ฟยังเล็งเห็นความจำเป็นในการสร้างคอมมูนิตีของคนรักสาเกให้เข้มแข็ง เพราะ “โปรดักต์ดี มาร์เกตติงต้องดีด้วย” จึงเป็นที่มาของการริเริ่มจัดงาน Sake Week Thailand ที่คุณกอล์ฟได้ติดต่อผู้นำเข้าสาเกอื่นๆ ในประเทศไทย และเชิญให้มาร่วมสร้าง Sake Community ร่วมกัน แม้ว่าในช่วงครึ่งปีก่อนเริ่มงานนั้นไม่มีบริษัทจัดงานไหนกล้ารับงานสาเกซึ่งเป็นแอลกอฮอล์เลยแม้แต่รายเดียว แต่คุณกอล์ฟได้ภรรยาซึ่งเป็นเจ้าของบริษัทจัดงานอีเวนต์สาย Luxury และ Tech พร้อมทีมงานกว่า 200 ชีวิตเข้ามาช่วย ซึ่งใช้เวลาเตรียมงานเพียงแค่ 2 เดือนเศษ แต่สามารถสร้างปรากฏการณ์รวบรวมผู้นำเข้าสาเกได้มากที่สุด ในงานสาเกโดยเฉพาะ ซึ่งเป็นครั้งแรกของประเทศ แม้แต่คนญี่ปุ่นและสื่อที่เดินทางมานั้นล้วนชื่นชมการจัดงานว่ามีความทันสมัยและน่าสนใจ นับเป็นก้าวสำคัญที่ผลักดันวงการสาเกและสาโทในประเทศไทยให้เป็นที่รู้จักมากยิ่งขึ้น ภายในงานยังมีร้านอาหารชื่อดังที่ทางคุณกอล์ฟได้เชิญเข้าร่วมจำนวนมาก อาทิ Gaa, Potong, Nusara, Cross, CÔTE by Mauro Colagreco ที่มาร่วมครีเอตเมนูเด็ดแพริ่งกับสาเก ถือเป็นการสร้างมิติใหม่พร้อมตอกย้ำว่าไทยคือจุดหมายปลายทางด้านอาหารและเครื่องดื่มระดับแถวหน้าของโลกไปแล้ว
“บริษัทนำเข้าสาเกของผมเป็นบริษัทเดียวในไทยที่ไม่ได้มีผู้ถือหุ้นเป็นคนญี่ปุ่น ผมทำสิ่งนี้จากความหลงใหลสาเกล้วนๆ และมีความปรารถนาดีต่อวงการสาเกไทย โดยใช้เงินลงทุนมากกว่า 20 ล้านบาท เพื่อเป้าหมายในการผลักดันวงการสาเกให้เป็นที่รู้จัก ทั้งยังเอื้อประโยชน์ต่อผู้นำเข้าทุกรายซึ่งผมไม่ได้มองว่าเป็นคู่แข่ง แต่เป็นพันธมิตร เป็นคู่ค้าที่สามารถสร้างคอมมูนิตีร่วมกันได้ นอกจากนี้ผมมีความเคารพเป็นอย่างยิ่งต่อผู้ผลิตที่ญี่ปุ่นทุกราย และเป้าหมายต่อไปของผมคือการให้ความรู้เกี่ยวกับสาเกญี่ปุ่นอย่างถูกต้องแบบเจาะลึก โดยไม่มีอคติหรือลำเอียงให้กับคนในแวดวงอาหารและเครื่องดื่ม และผู้สนใจศิลปะแห่งการผลิตสาเกญี่ปุ่น หรือเพื่อต่อยอดในสายอาชีพ” คุณกอล์ฟกล่าวทิ้งท้าย
