“ตอนนี้เราก็ยังเป็นพนักงานประจำอยู่ เป็นโปรดิวเซอร์ที่ GMM TV ทำร้านอาหารชื่ออรรถรส Eatery มีค็อกเทลบาร์ OFTR BAR และ Mutual Bar มี Pineapple Surf Club ที่หัวหิน กำลังมีโปรเจ็กต์เขียนบทภาพยนตร์อีก 1 เรื่อง และตอนนี้เป็นนักเรียนที่เลอ กอร์ดอง เบลอ ดุสิต จบหลักสูตรประกาศนียบัตรการประกอบอาหารคาว (Diplôme de Cuisine) หลักสูตรประกาศนียบัตรการประกอบขนมอบ (Diplôme de Pâtisserie) และกำลังเรียนหลักสูตรประกาศนียบัตรศิลปะการทำขนมปัง (The Art of Bakery)”

พอได้เห็นคุณป๋อมแป๋มในชุดเครื่องแบบของโรงเรียนเต็มยศที่กำลังง่วนอยู่กับการทำช็อกโกแลต ก็เหมือนได้ทำความรู้จักกับอีกบทบาทที่เข้มข้นจริงจังของเจ้าตัวไปด้วย คุณป๋อมแป๋มเล่าย้อนไปว่าชอบทำอาหารมาตั้งแต่เด็กๆ แล้ว “จริงๆ แล้วเราชอบทำอาหารมาก แต่วิธีการสอนของแม่หรือคนในบ้านก็จะเป็นแนวทำไปชิมไป กะๆ เอา แม่ทำ 10 รอบ ก็เป็นอาหาร 10 รส (หัวเราะ) จนเราทำงานมา 20 ปี กำลังจะก้าวสู่วัย 40 ก็รู้สึกว่าตายแล้ว! อีกไม่นานก็น่าจะไม่มีแรง พอดีเป็นช่วงที่มีเวลาพัก เห็นเลอ กอร์ดอง เบลอ ดุสิต มีคอร์สวันเสาร์ก็เลยลองเรียนอาหารคาวก่อน เพราะเราอยากเจอทักษะบางอย่างที่ตัวเองไม่เคยรู้ว่าทำได้

“พอเราเรียนจริงถึงได้รู้ว่างานจับมีด การหั่น ปอก ซอย งานละเอียดเราก็ทำได้ ดีและเร็ว หรืองานแต่งจานซึ่งแต่ก่อนคิดว่าตัวเองเป็นคนหยาบ กลับรู้สึกว่าเรายินดีที่จะกรีดเบคอนให้เป็นฝอยเป็นเส้น สานเป็นตะกร้าแล้วเอาเข้าเตาอบ เป็นงานที่ไม่เคยรู้ว่าชอบทำและจดจ่อกับมันได้ ถามว่าตั้งใจเรียนยาวตั้งแต่แรกไหม ไม่ได้ตั้งใจเลย แต่เหมือนได้เจอ Another Part of Me ก็เลยสนุกมาก”

อย่างที่รู้กันว่าการเรียนของเลอ กอร์ดอง เบลอ ดุสิต เป็นการเรียนที่จริงจังและใช้เวลาจนเราอดสงสัยไม่ได้ว่าคุณป๋อมแป๋มที่ทำทั้งงานประจำและดูแลธุรกิจร้านอาหารหลายร้านไปด้วยจัดสรรเวลาอย่างไร

“เราไม่ได้ยุ่งขนาดนั้น สิ่งที่อาจจะสู้น้องๆ ในคลาสไม่ได้คือเราไม่มีเวลาซ้อมระหว่างสัปดาห์ เพราะฉะนั้นต้องตักตวงในคลาสให้ได้มากที่สุด เวลาทำกับข้าวที่บ้านเรามี 1 เตา ระหว่างนั้นก็ทยอยเตรียมของไปได้ แต่ในชั้นเรียน 1 เตาคือ 4 หัวเตา ด้านหลังเป็นเรื่องการหั่น สับ มีการจับเวลา รู้เลยว่าถ้าไม่ซ้อมก็มีแนวโน้มที่จะสติแตก ไม่อย่างนั้นต้องปล่อยหม้อนั้นงวด หม้อนี้ไหม้ ที่นี่เหมือนสอนว่าการทำซ้ำๆ ความจำและกล้ามเนื้อของเราจะขยับไปได้อย่างคล่องแคล่ว ซึ่งจะรู้สึกได้ในคลาสหลังๆ ว่าทุกอย่างง่ายขึ้นจากช่วงแรกเยอะมาก”

เราถามต่อว่าป๋อมแป๋มในวงการบันเทิง กับป๋อมแป๋มที่เป็นนักเรียนทำอาหารแตกต่างกันมากไหม เจ้าตัวตอบทันทีว่ามาก “วงการบันเทิงเราเจอคนเยอะ ทุกอย่างรวดเร็ว เราเป็นหัวหน้าเน้นสั่งการแล้วปล่อยให้คนอื่นทำ แต่พออยู่ในครัวเหมือนอยู่ในอีกโลก ได้รู้ว่าบางอย่างเร็วไม่ได้ ต้องจัดสรรให้เหมาะสม อีกอย่างที่รู้สึกว่าแทบไม่เหมือนชีวิตเราเลยคือมีเรื่องให้โฟกัสเยอะ เวลาตีครีม ทำกานาช เราต้องจดจ่อกับมัน ไม่สามารถวอกแวก เล่นโทรศัพท์หรือดู Netflix ไปด้วยได้

“พอเจอว่าเราอยู่แบบมีสมาธิได้ บางทีก็นำไปใช้กับชีวิต ใช้ตอนตีเทนนิส หรือเล่นละครบ้าง บางทีก็เอาไปใช้ตอนทะเลาะกับเพื่อน ดูความเป็นไปว่า อุ๊ย! ตอนนี้อารมณ์เริ่มเดือดแล้วนะ ถึงเวลาต้องหรี่ไฟ ตอนนี้ไม่ถึงจุดไหม้ หรือจริงๆ เพื่อนเราถึงสีคาราเมลเข้มแล้ว (หัวเราะ)”

สิ่งที่รุ่นพี่ในรั้วเลอ กอร์ดอง เบลอ ดุสิตคนนี้ได้รับจากโรงเรียนและอยากส่งต่อถึงน้องๆ ที่มีฝันเดียวกันนั้นมีอยู่หลายข้อ โดยเฉพาะความรู้และทักษะด้านอาหารแบบลึกซึ้งซึ่งนำไปใช้ได้จริง

“ป๋อมแป๋มเรียนที่นี่มา 4 ปีแล้ว พอมาทบทวนว่าเรามีอะไรที่แตกต่างจาก 4 ปีที่แล้วบ้าง ข้อแรกคือพื้นฐานด้านวิทยาศาสตร์อาหารค่อนข้างแน่น เช่น การจับคู่รสชาติ การจัดการวัตถุดิบ ซึ่งการเรียนแบบ Watch, Learn & Do ทำให้มีพื้นฐานที่ดี อย่างคลาสขนมที่ไม่เคยคิดว่าจะทำได้ เพราะเข้าใจว่าสูตร Pastry ต้องเป๊ะ แต่พอได้เรียนก็รู้ว่าสูตรเป๊ะจริง แต่ยังมีอะไรให้เราได้หยิบมาผสมผสาน ผ่านเทคนิคต่างๆ ทำให้เกิดรสชาติใหม่ๆ ได้อีก

“สำหรับคนที่อยากเรียนที่นี่เพราะอยากเข้าไปในธุรกิจ F&B ขอให้มั่นใจว่าเรียนจบแล้วไปทำงานครัวได้แน่นอน คุณจะเข้าใจทุกระบบ เริ่มตั้งแต่หั่น ล้าง สับ เชื่อว่าจะขึ้นไปเป็น Sous Chef และ Chef ในอนาคตได้ไม่ยาก

“ที่สำคัญคือเมื่อขึ้นไปถึงจุดนั้นได้แล้ว คุณจะไม่พลาดรายละเอียดเล็กๆ น้อยๆ เลย”
